Fabian Zarama is a dedicated coffee producer in La Florida, Nariño. This region has gained popularity in the specialty coffee market in recent years due to the general cup quality and the unique flavour profile.
High altitudes (up to 2000 m.a.s.l.) in combination with great micro climates throughout the region are only one reason for the coffees’ flavour excellence.
Producers such as Fabian have established sound agricultural practices as a standard, including redundant fertilisation and tree husbandry, which leads to superb crops, year on year.
This particular lot of single variety Caturra was grown at 1900 m.a.s.l. and processed with clean spring water. The depulped coffee was fermented for 18 hours before being dried consistently for 15 days.
We selected Fabian’s coffee from a blind tasting for its very full mouthfeel and range of complex fruit flavours, paired with a unique sensation of Cola.
