Cranberry. Green apple. Crisp acidity. Juicy mouthfeel.
This wonderful coffee is grown in the highlands of Sehe - a micro region of the Kayanza district in Burundi.
Most farmers have only a few trees to harvest from and so all coffees are collected and processed at a central station in order to create mirco-lots separated by region or harvesting day.
This specific lot was harvested between May 25th and June 10th.
Salum Ramadhan, the owner of the Mbirizi washing station, has made huge efforts to improve logistics, knowledge transfer and processing methods, improving the overall quality of the regions green coffee over the past years. As he is paying high premiums to the farmers who sell their cherries to Mbirizi they aspire to higher quality coffee by cautious picking and careful hand-sorting.
Sorted cherries are then graded by density before they get pulped, followed by a 12 hour dry fermentation and a soaking process before being dried on raised african beds for up to 20 days.
We selected this micro lot due to its bright flavours and crisp, well rounded structure and will highlight these characteristics by roasting it with a lower end temperature compared to our other coffees.
