AA Shinzingo

A new coffee for us here at Bonanza, and the first Tanzanian coffee for many seasons. The Shinzingo Coop is one of the most experienced in the region, with over 500 active members delivering Cherry throughout the harvest. Much like most Tanzanian coffees, the cherry is sorted with density grading and controlled soaking in order to reduce water use. At Shinzingo they also adopt an extended fermentation and drying time, resulting in consistent, fruit driven cup-profile that is a perfect example of this region of Africa. In the coming years, they are also looking into strengthening their efficiency and preparing for Natural processed coffees.
